Haley Rd is a great place for beinners and to hone your offroad driving skills. It is a fairly easy trail that winds through the Prentice Cooper State Forest and follows the Tennessee River. There are plenty of paces along the trail (especially on Suck Creek Road) to pull off to enjoy a swim or to hike around the forest.
